Kombucha Iceland starts with whole, fresh, organic and local ingredients.


Icelandic water has an international reputation. Glaciers and ice blanket more than one-tenth of our island, along with 10,000 waterfalls including Europe’s most powerful cascade, Dettifoss. This, combined with the fact that Iceland has been ranked the cleanest country in the world, makes our water exceptionally pure and ideal for brewing kombucha.


We use five varieties of hand selected, certified organic teas.

White Peony

China, Fujian Province

White Peony is named for the shape of its leaves: like a bud early bloom. It is grown at an elevation of around 800 meters. After brewing the tea is clear and bright, with a mellow soybean milk aroma.

Japanese Sencha

Japan, Kyushu Province

Sencha is the most popular type of green tea in Japan. When brewed, this tea has a greenish-gold color, a refreshing aroma, and a good balance between astringency and sweetness.

Jasmine Tea

China, Hubei Province

Jasmine Tea is green tea that is scented by contact with jasmine blossoms. The resulting tea is subtly sweet and highly fragrant. It is the most famous scented tea in China.

Yunnan Schwarz

China, Yunnan Province

The best Yunnan is derived from tea bushes that have been cultivated from indigenous tea trees and wild tea bushes. This gives Yunnan black teas richness, softness, and a creamy mouth-feel that distinguishes it from most other Chinese black teas.

China Keemun

China, Hubei Province

Keemun black teas are known for their aromatic fragrance, mellow flavor and beautiful aesthetic value, as well as the brilliant red liquor the brewed tea leaves produce.


We feed our yeast with organic, fair trade sugar.


Crowberries thrive in colder climates and are packed with nutrients, antioxidants, minerals and vitamin C. Our berries are wild-foraged, rinsed, then added directly to our kombucha without further processing.


Native to Southeast Asia, ginger root has long been prized for its aromatic, culinary and medicinal properties. All of our ginger is certified organic.


Where available we use the seasonal chocolate mint variety – one of our favourite ingredients. The leaves are hand picked from our garden and have a delightful “chocolate mint” flavor.


Regarded as one of the healthiest herbs, it is best used fresh – just as we do. Its sweet, earthy scent indicates not only its aromatic flavor, but also an impressive list of nutrients.


Not only are strawberries delicious, they also boost our health. Adding them raw and lightly fermenting them is the secret to our delicate strawberry flavor.


Rich in vitamins, fibre, and minerals, we love the sweet-tart taste it imparts to our kombucha.


Uniquely Icelandic, our crowberry kombucha celebrates the tart flavor and intense red color of the wild berry.


Our ginger flavor is zesty with a mild spicy heat.


A unique blend of ginger and crowberry, bringing out the best of both flavors.
